This is a domestic turkey that some eat for Thanksgiving.  This guy has been rescued by Animal Acres.  He has been genetically modified to grow to size that is too large to fly.  The snood and the wattle (red fleshy part) can change colors and it did while we were there.  They do it simialarly to how dogs hair spikes up when they feel they need to impress.
